Can I eat expired ice cream?

It's a legitimate question, that a lot of people have, especially if that expiration date has just passed and the ice cream still is in your freezer, and looks fine. Is it safe though? Well, I'm not a food scientist, but I did eat this stuff, and am still alive, so there's your scientific data, with a sample size of one / me.

The funniest thing about this experience to me was that I found this ice cream at 7-11, and noticed that it was over one year past it's expiration date, and yet the store clerk didn't throw it away. Instead, he said I could buy it for half-price because it was expired...by over a year! Needless to say, I do not recommend buying food at 7-11. Totally "sus," as my teenage daughter would say.
